JERUSALEM ARTICHOKES WITH COUSCOUS
Ingredients
couscous
1 onion
a handful of thinly sliced mushrooms
1 red pepper
as many jerusalem artichokes as you like
salt, pepper, sage and thyme to season with
Prepare couscous. When cooled, add sage, pepper and salt, mix well. Add roughly chopped red pepper. Let rest.
Cut both onions and mushrooms. Cook onions with olive oil, salt and thyme for a few minutes at medium heat until slightly brown. Add mushrooms. When cooked, add to couscous and mix well.
Wash artichokes and cut into medium sized chunks. Lay on a tray, drizzle with olive oil and salt. Add some crushed garlic if you like. Put in oven for about half an hour at about 200° degrees.
Enjoy with a small bunch of really nice people like sisters and their flatmates, as we did.
