Salmon with Cucumber Dressing.

The air is full of rain. Cleaning the city after some hot days. You know this smell, water hitting hot pavement. Turning everything wet and deserted. The best thing about summer. Standing outside and indulging.

SALMON WITH CUCUMBER DRESSING

salmon – two 250g pieces
olive oil

cucumber – one
cream - 100 ml
some dill stalks
a pinch of salt and pepper

Brush the salmon on both sides with olive oil, then season with salt. Heat a non-stick frying pan. Place the fish skin-side down and leave over moderate heat for four or five minutes, until the skin has crisped.
Turn, cover with a lid and leave for another five minutes, until the fish is lightly cooked through to the centre.

Meanwhile, grate the cucumber into very thin slices. Add cream and salt, pepper and dill to taste. It’s freshness goes really well with steamingly hot fish. Don’t let it stand for too long, otherwise it’ll go grainy.

Additionally prepare this dish with simple cooked potatoes.
Or try the dressing with cold smoked salmon.
