AnOther Sorbet: Damsons with Cinnamon.

A simple and fresh summer recipe that embodies it completely. Use very ripe damsons to ensure a rich and sweet taste.

DAMSON AND CINNAMON SORBET.
glucose syrup – 50 g
sugar – 160 g
water – 240 g
damson puree – 500 ml
cinnamon stick – 1/2 half
Heat the glucose, sugar, cinnamon stick and water and mix thoroughly. Try to aim for perfect 31°C, remove the cinnamon stick and freeze.
Damsons go very well with ginger, creamy cheese and spelt. More recipes to come.
