For Assembly & Decoration:
Instructions
- Preheat oven to 350°F. Grease and line three 8-inch round cake pans with parchment paper.
- For the Cake: In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla. Alternate adding the flour mixture and milk, mixing just until combined. Fold in sprinkles if using. Divide the batter evenly between pans and bake for 25–28 minutes, or until a toothpick comes out clean. Cool completely before assembling.
- For the Buttercream Frosting: Beat the butter until smooth, then gradually add powdered sugar. Mix in cream, vanilla, and salt, beating until light and fluffy. Tint with food coloring if desired.
- For the Chocolate Drip: Heat the heavy cream until just simmering, pour over the chocolate chips, and let sit 1–2 minutes. Stir until smooth and let cool slightly before using.
- To assemble: Level the cakes. If making a candy-filled center, cut a 2-inch circle from the middle of one or two layers. Stack the first cake layer, spread with frosting, then stack the layer(s) with the cut-out hole. Fill the cavity with M&M’s and candy. Top with the final cake layer and frost the entire cake smoothly. Chill briefly.
- Pour the chocolate drip around the edges and top of the cake. Decorate with extra M&M’s, candies, and sprinkles. Chill until set before slicing.
