Ingredients
Scale
Chicken and Rice
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
Soup Mixture
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 tablespoon butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Cheese and Seasonings
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking, then evenly spread the uncooked long-grain white rice across the bottom.
- Mix Soup Liquid: In a bowl, combine the chicken broth, cream of chicken soup, sour cream, melted butter, garlic powder, and onion powder. Stir until the mixture is smooth and well-blended.
- Assemble the Base: Pour the soup mixture evenly over the rice in the baking dish. Season with salt and pepper to your taste.
- Arrange Chicken: Place the chicken breasts on top of the rice and soup mixture. Season the chicken breasts with salt, pepper, and any additional spices if desired.
- Bake Covered: Cover the casserole dish with aluminum foil and bake for 45 minutes to allow the rice to absorb the liquid and the chicken to begin cooking.
- Add Cheese and Finish Baking: Remove the foil, sprinkle shredded cheddar and grated Parmesan cheeses evenly over the casserole, then return to the oven uncovered. Bake for an additional 15-20 minutes until the chicken is fully cooked (internal temperature reaches 165°F) and the cheese is melted and bubbly.
- Garnish and Serve: Remove the casserole from the oven and garnish with freshly chopped parsley before serving hot.
Notes
- You can substitute sour cream with Greek yogurt for a lighter option.
- Ensure chicken breasts are of even thickness for uniform cooking.
- Check the internal temperature of chicken with a meat thermometer to avoid undercooking.
- Using fresh garlic and onion instead of powders will change the flavor profile but may be preferred for freshness.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly.
