Description

Angel Chicken Rice Casserole is a comforting and creamy baked dish featuring tender chicken breasts layered over a flavorful mix of rice, chicken broth, sour cream, and creamy soup. Topped with melted cheddar and Parmesan cheeses, this hearty casserole is a perfect family dinner that combines ease with rich flavors.

Ingredients

Scale

Chicken and Rice

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice

Soup Mixture

  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 tablespoon butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Cheese and Seasonings

  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking, then evenly spread the uncooked long-grain white rice across the bottom.
  2. Mix Soup Liquid: In a bowl, combine the chicken broth, cream of chicken soup, sour cream, melted butter, garlic powder, and onion powder. Stir until the mixture is smooth and well-blended.
  3. Assemble the Base: Pour the soup mixture evenly over the rice in the baking dish. Season with salt and pepper to your taste.
  4. Arrange Chicken: Place the chicken breasts on top of the rice and soup mixture. Season the chicken breasts with salt, pepper, and any additional spices if desired.
  5. Bake Covered: Cover the casserole dish with aluminum foil and bake for 45 minutes to allow the rice to absorb the liquid and the chicken to begin cooking.
  6. Add Cheese and Finish Baking: Remove the foil, sprinkle shredded cheddar and grated Parmesan cheeses evenly over the casserole, then return to the oven uncovered. Bake for an additional 15-20 minutes until the chicken is fully cooked (internal temperature reaches 165°F) and the cheese is melted and bubbly.
  7. Garnish and Serve: Remove the casserole from the oven and garnish with freshly chopped parsley before serving hot.

Notes

  • You can substitute sour cream with Greek yogurt for a lighter option.
  • Ensure chicken breasts are of even thickness for uniform cooking.
  • Check the internal temperature of chicken with a meat thermometer to avoid undercooking.
  • Using fresh garlic and onion instead of powders will change the flavor profile but may be preferred for freshness.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly.
