Description

This Apple Radish and Watercress Salad with Pistachio Chile de Árbol Dressing is a vibrant and flavorful dish that combines the crispness of apples, the peppery bite of radishes, and the freshness of watercress, all tossed in a spicy pistachio dressing.

Ingredients

Scale

Salad:

  • 2 cups watercress (trimmed)
  • 1 green apple (thinly sliced)
  • 1 red apple (thinly sliced)
  • 56 radishes (thinly sliced)
  • ¼ small red onion (very thinly sliced)

Dressing:

  • ¼ cup roasted pistachios (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 small garlic clove (minced)
  • 1 dried chile de árbol (crushed)
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Prepare the Dressing: In a small skillet over low heat, add the olive oil and crushed chile de árbol. Let it infuse gently for 1–2 minutes without burning. Remove from heat and stir in the minced garlic, apple cider vinegar, lemon juice, honey, and a pinch of salt and pepper. Let the dressing cool slightly, then stir in the chopped pistachios.
  2. Assemble the Salad: In a large salad bowl, combine watercress, sliced apples, radishes, and red onion. Drizzle the pistachio chile de árbol dressing over the salad just before serving and toss gently to coat.
  3. Serve: Serve immediately for best texture.

Notes

  • For a milder version, reduce the amount of chile or substitute with a pinch of red pepper flakes.
  • This salad pairs beautifully with grilled chicken or fish.
  • Use mixed greens or arugula if watercress is unavailable.
