- 1/2 teaspoon baking powder
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
- Prepare the Apricots: In a saucepan, simmer chopped apricots with water until softened. Set aside.
- Make the Crust: Cream butter and sugar, then mix in flour and salt. Press into the pan and bake until golden.
- Prepare the Filling: Whisk eggs, brown sugar, and vanilla. Add apricots, coconut, pecans, flour, and baking powder. Spread over the crust.
- Bake: Bake for 25-30 minutes until set and browned. Cool before cutting into bars.
