For the Birria:
- 3 pounds beef chuck roast or short ribs (cut into large chunks)
- 6 dried guajillo chiles (stems and seeds removed)
- 3 dried ancho chiles (stems and seeds removed)
- 1 dried pasilla chile (optional, for depth)
- 4 cups beef broth
- 1 small white onion (quartered)
- 5 cloves garlic
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 2 bay leaves
- Salt and pepper to taste
- 1 tablespoon vegetable oil (for frying)
For Serving:
- 12 corn tortillas
- 1 cup shredded Oaxaca or mozzarella cheese
- Chopped onion and cilantro for garnish
- Lime wedges for serving
Instructions
- Prepare the Chili Sauce: Place the dried chiles in a saucepan with enough water to cover. Cook until softened, then blend with onion, garlic, vinegar, spices, and 1 cup of broth.
- Cook the Beef: Brown seasoned beef in a pot, add the chili sauce, remaining broth, and bay leaves. Simmer for 3 hours until tender.
- Assemble Tacos: Dip tortillas in fat from the consommé, fill with beef and cheese, then cook until crispy.
- Serve: Garnish tacos with onion, cilantro, and lime wedges. Enjoy with warm consommé on the side.
Notes
- Make the birria ahead for better flavor.
- For spicier tacos, add a chile de árbol to the sauce blend.
