For the Birria:

  • 3 pounds beef chuck roast or short ribs (cut into large chunks)
  • 6 dried guajillo chiles (stems and seeds removed)
  • 3 dried ancho chiles (stems and seeds removed)
  • 1 dried pasilla chile (optional, for depth)
  • 4 cups beef broth
  • 1 small white onion (quartered)
  • 5 cloves garlic
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil (for frying)

For Serving:

  • 12 corn tortillas
  • 1 cup shredded Oaxaca or mozzarella cheese
  • Chopped onion and cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the Chili Sauce: Place the dried chiles in a saucepan with enough water to cover. Cook until softened, then blend with onion, garlic, vinegar, spices, and 1 cup of broth.
  2. Cook the Beef: Brown seasoned beef in a pot, add the chili sauce, remaining broth, and bay leaves. Simmer for 3 hours until tender.
  3. Assemble Tacos: Dip tortillas in fat from the consommé, fill with beef and cheese, then cook until crispy.
  4. Serve: Garnish tacos with onion, cilantro, and lime wedges. Enjoy with warm consommé on the side.

Notes

  • Make the birria ahead for better flavor.
  • For spicier tacos, add a chile de árbol to the sauce blend.
