Instructions
- Make the Roux: In a large heavy-bottomed pot, heat oil and whisk in flour to form a roux. Cook until deep brown.
- Sauté Vegetables: Add onion, bell pepper, celery, and garlic. Cook until softened.
- Add Meats: Stir in sausage and chicken, coating with the roux.
- Cook Gumbo: Pour in broth, tomatoes, seasonings, and simmer for 45 minutes. Add shrimp and cook for additional 5–7 minutes.
- Finish and Serve: Stir in filé powder, remove bay leaves, and serve hot over rice. Garnish with green onions and parsley.
