  • ¼ onion
  • ½ teaspoon salt
  • ½ teaspoon cumin

Instructions

  1. Cook the Potatoes: Boil the diced potatoes in salted water until tender, about 10–12 minutes. Drain and set aside to cool slightly.
  2. Cook the Chorizo: In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5–7 minutes. Add the cooked potatoes and stir to combine, mashing lightly. Remove from heat and set aside.
  3. Prepare the Guajillo Chile Sauce: Lightly toast the guajillo chiles in a separate pan for 30 seconds per side until fragrant. Transfer to a bowl and soak in hot water for 10 minutes to soften. Combine softened chiles, garlic, onion, salt, cumin, and ½ cup water in a blender. Blend until smooth and strain the sauce if needed for a smooth consistency.
  4. Dip and Fry Rolls: Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Dip each roll thoroughly in the chile sauce until coated, then fry in the hot skillet for about 1 minute per side until the bread is lightly crisped and has absorbed the sauce.
  5. Assemble the Pambazos: Slice the rolls open without cutting all the way through. Fill them generously with the chorizo and potato mixture.
