Description

This Baked Denver Omelet recipe is a delicious and hearty twist on the classic Denver omelet, baked to perfection for a fluffy and flavorful dish. Packed with sautéed onions, green and red bell peppers, diced ham, and sharp cheddar cheese, this oven-baked omelet is perfect for breakfast, brunch, or a comforting anytime meal. Easy to prepare and perfect for serving a crowd, it’s a satisfying combination of tender vegetables, savory ham, and gooey cheese all baked into a golden, puffy delight.

Ingredients

Scale

Vegetables and Meat

  • 2 tablespoons butter
  • 1/2 small onion, diced
  • 1/2 small green bell pepper, diced
  • 1/2 small red bell pepper, diced
  • 1 cup diced cooked ham

Egg Mixture

  • 8 large eggs
  • 1/4 cup half-n-half (or whole milk)
  • 3/4 cup shredded cheddar cheese
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat and prep: Preheat your oven to 400 degrees F (200 degrees C). Lightly coat a 10-inch round baking dish with nonstick spray to prevent sticking.
  2. Sauté vegetables and ham: In a large skillet over medium heat, melt the butter. Add the diced onion, green bell pepper, and red bell pepper; sauté until they become tender and softened, about 5 minutes. Then stir in the diced ham and continue cooking for an additional 5 minutes to heat through and combine flavors.
  3. Combine ingredients: In a large bowl, whisk together the eggs and half-n-half until fully blended. Stir in the shredded cheddar cheese, the sautéed vegetable and ham mixture, onion powder, garlic powder, salt, and pepper until everything is evenly mixed.
  4. Bake: Pour the egg mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for about 25 minutes, or until the omelet is golden brown around the edges, puffed up in the center, and a toothpick inserted into the middle comes out clean.
  5. Serve: Remove from the oven and let it cool slightly. Slice into wedges and serve warm for a delicious meal.

Notes

  • You can substitute half-n-half with whole milk or even a dairy-free milk alternative for a lighter or vegan variation.
  • Use pre-cooked ham to save time; leftover ham works great for this recipe.
  • Add your favorite herbs such as parsley or chives for extra flavor.
  • Make sure to test for doneness by inserting a toothpick – if it comes out clean, the omelet is ready.
  • The dish can be prepared ahead of time and refrigerated, just bake fresh before serving.
