Pasta:

  • 8 ounces pasta of choice

Baked Feta:

  • 1 block (8 ounces) feta cheese

Roasted Tomatoes:

  • 2 pints cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 1/4 cup fresh basil leaves, chopped
  • Optional grated Parmesan for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the tomatoes: Place cherry tomatoes in a baking dish, drizzle with olive oil, season with salt, pepper, and red pepper flakes, then toss to coat.
  3. Bake the feta: Place the block of feta in the center of the dish among the tomatoes, drizzle with more olive oil, and bake for 30-35 minutes until tomatoes burst and feta softens.
  4. Cook the pasta: Cook pasta in salted boiling water until al dente, then drain, reserving 1/2 cup of pasta water.
  5. Combine ingredients: Mash the feta and tomatoes, add garlic and basil, then mix in the cooked pasta. Add reserved pasta water as needed.
  6. Serve: Serve warm, topped with basil and Parmesan if desired.
