For the Caramelized Onions:

- 1 tablespoon olive oil
- 2 large yellow onions, thinly sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
- 1 tablespoon balsamic vinegar
- 1/4 cup dry white wine (optional)
For the Gnocchi:
- 1/2 cup beef or vegetable broth
- 1/2 cup heavy cream
- 1 pound shelf-stable or refrigerated gnocchi
- 1 cup shredded Gruyère cheese (or Swiss)
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Caramelize the onions: In a large oven-safe skillet, cook the onions with salt and pepper until golden. Stir in thyme and balsamic vinegar.
- Add liquids: Deglaze with white wine, then add broth and cream. Simmer and add gnocchi.
