Marinade Ingredients
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- Zest and juice of 1 lemon
- 1 red chilli, finely chopped (seeds removed for less heat)
- 1 tablespoon chopped fresh parsley
- ½ teaspoon smoked paprika
- Salt and black pepper to taste

Instructions
- Prepare the marinade: In a large bowl, combine olive oil, minced garlic, lemon zest and juice, chopped chilli, parsley, smoked paprika, salt, and pepper. Mix well to create a flavorful marinade.
- Marinate the prawns: Add the prawns to the marinade bowl and toss thoroughly to coat them evenly. Cover and refrigerate for 20 to 30 minutes to allow the prawns to absorb the flavors.
- Preheat the grill: Heat your grill or barbecue to medium-high heat to ensure it’s ready for quick searing.
- Prepare skewers: Thread the marinated prawns onto skewers. If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning.
- Grill the prawns: Place the skewers on the grill and cook for 2 to 3 minutes per side, or until the prawns turn pink, are opaque, and have a slight char for added flavor.
- Serve immediately: Remove prawns from heat and serve hot with fresh lemon wedges and extra chopped parsley, if desired.
