Description

Marinade Ingredients

  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 red chilli, finely chopped (seeds removed for less heat)
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

  • pounds (about 700g) large raw prawns, peeled and deveined, tails on

Instructions

  1. Prepare the marinade: In a large bowl, combine olive oil, minced garlic, lemon zest and juice, chopped chilli, parsley, smoked paprika, salt, and pepper. Mix well to create a flavorful marinade.
  2. Marinate the prawns: Add the prawns to the marinade bowl and toss thoroughly to coat them evenly. Cover and refrigerate for 20 to 30 minutes to allow the prawns to absorb the flavors.
  3. Preheat the grill: Heat your grill or barbecue to medium-high heat to ensure it’s ready for quick searing.
  4. Prepare skewers: Thread the marinated prawns onto skewers. If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning.
  5. Grill the prawns: Place the skewers on the grill and cook for 2 to 3 minutes per side, or until the prawns turn pink, are opaque, and have a slight char for added flavor.
  6. Serve immediately: Remove prawns from heat and serve hot with fresh lemon wedges and extra chopped parsley, if desired.
