Green Chile Sour Cream Sauce

  • Freshly ground black pepper, to taste

Instructions

  1. Make the Sauce: In a small bowl, combine sour cream, drained green chiles, chopped cilantro, minced garlic, fresh lime juice, kosher salt, and freshly ground black pepper. Stir well until smooth and set aside in the refrigerator to chill while preparing the taquitos.
  2. Prepare the Taquitos Filling: In a mixing bowl, thoroughly mix the refried beans with shredded pepper Jack cheese, shredded cheddar cheese, ground cumin, and chili powder until evenly combined.
  3. Warm Tortillas: Heat tortillas briefly in the microwave or on a skillet until warm and pliable, making them easier to roll without cracking.
  4. Assemble Taquitos: Spoon about 2 tablespoons of the bean and cheese mixture onto each warm tortilla. Roll each tortilla tightly around the filling. Use toothpicks if necessary to secure the rolled taquitos and prevent them from unrolling during frying.
  5. Fry Taquitos: Pour neutral oil into a skillet to a depth of about 1/2 inch and heat over medium-high heat until hot.
