  • 1/2 cup pearl barley

Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5–6 minutes. Remove the beef from the pot and set aside.
  2. Sauté Aromatics: In the same pot, add the chopped onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds to release its aroma.
  3. Cook Vegetables: Add the sliced carrots and celery to the pot, cooking for 3–4 minutes while stirring occasionally to soften them slightly.
  4. Add Beef and Liquids: Return the browned beef to the pot. Pour in the beef broth and water. Stir in the pearl barley, tomato paste, dried thyme, salt, black pepper, bay leaf, and Worcestershire sauce until well combined.
  5. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 45–60 minutes, or until the beef is tender and the barley is fully cooked.
  6. Finish and Serve: Remove the bay leaf from the soup. Ladle into bowls and garnish with chopped fresh parsley, if desired, before serving warm.
