Description
Beef Chop Suey is a classic Chinese-American stir-fry dish featuring tender slices of flank steak cooked with crisp, colorful vegetables in a savory sauce. This quick and easy recipe balances the hearty flavor of beef with fresh vegetables like celery, mushrooms, and snow peas, all brought together by a slightly thickened soy-oyster sauce. Perfect for a satisfying weeknight meal, it pairs wonderfully with rice or noodles.
Ingredients
Scale
Beef Marinade
- 1 pound flank steak or sirloin, thinly sliced against the grain
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
Stir-Fry
- 2 tablespoons vegetable oil, divided
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup celery, sliced
- 1/2 cup carrots, julienned
- 1 cup sliced mushrooms
- 1/2 cup snow peas
- 1 cup bean sprouts
Sauce
- 3/4 cup beef broth
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- Salt and pepper to taste
Instructions
- Marinate the beef: In a bowl, toss the thinly sliced beef with soy sauce, oyster sauce, and 1 tablespoon of cornstarch. Let it marinate for 15 to 20 minutes to allow the flavors to penetrate and tenderize the meat.
- Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2 to 3 minutes until the beef is browned but not fully cooked through. Remove the beef from the pan and set aside.
- Sauté aromatics: Add the remaining 1 tablespoon of oil to the pan. Stir-fry the sliced onion and minced garlic for about 1 minute until fragrant and slightly softened, being careful not to burn the garlic.
- Cook the vegetables: Add the celery, carrots, sliced mushrooms, and snow peas to the pan. Stir-fry for 3 to 4 minutes until the vegetables are just tender but still crisp.
- Combine beef and bean sprouts: Return the cooked beef to the pan and add the bean sprouts, mixing everything evenly.
- Add broth and thicken sauce: Pour in the beef broth and bring the mixture to a simmer. Stir in the cornstarch slurry and cook for another 1 to 2 minutes until the sauce thickens and coats the ingredients well.
- Season and serve: Taste the dish and season with salt and pepper as desired. Serve the hot Beef Chop Suey over steamed rice or noodles for a complete meal.
