Description

This vibrant Beef Onion Stir Fry combines tender sirloin slices with sweet onions and colorful bell peppers, all coated in a savory soy-based marinade. Ready in just 25 minutes, it’s a quick and delicious stir-fry perfect over steamed rice or noodles for a satisfying weeknight dinner.

Ingredients

Scale

Beef Marinade

  • 1 lb beef sirloin, sliced against the grain
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch mixed with 2 tbsp water

Stir Fry Vegetables

  • 2 medium yellow onions, thinly sliced
  • 1 cup bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced

Cooking Oils

  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Marinate the beef: In a bowl, combine the sliced beef sirloin with the soy sauce, brown sugar, and the cornstarch-water mixture. Mix well to coat all pieces evenly. Let it marinate for at least 15 minutes to absorb the flavors and tenderize the meat.
  2. Sauté aromatics and onions: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and thinly sliced onions, sautéing until the onions become translucent and fragrant, which usually takes about 3-4 minutes.
  3. Add bell peppers: Toss in the sliced bell peppers and stir-fry them with the onions for 2-3 minutes until they become slightly tender but still crisp and vibrant in color.
  4. Cook the beef: Push the vegetables to the side of the skillet. Add the marinated beef along with any marinade to the empty side of the pan. Cook the beef, stirring occasionally, until it browns and is cooked through, about 4-5 minutes.
  5. Combine and thicken sauce: Mix the beef with the vegetables in the center of the skillet. Drizzle in the tablespoon of sesame oil and stir to combine. Continue cooking and stirring for another 2-3 minutes until the sauce thickens and coats the ingredients evenly.
  6. Serve: Serve the hot beef and vegetable stir fry immediately over steamed rice or your choice of noodles for a complete meal.

Notes

  • For a spicier version, add sliced fresh chili or a pinch of red pepper flakes when sautéing the garlic and onions.
  • Be sure to slice the beef against the grain to keep it tender.
  • You can substitute sirloin with flank steak or ribeye depending on your preference and budget.
  • Use low-sodium soy sauce to better control the saltiness of the dish.
  • For a gluten-free variation, use tamari instead of soy sauce.
