Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9-inch square or round baking dish to prevent sticking.
  2. Mix Blueberries: In a medium bowl, toss the blueberries with 1/4 cup of the granulated sugar, lemon juice, and lemon zest until evenly coated. Pour this mixture into the prepared baking dish.
  3. Make Batter: In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract just until combined; do not overmix.
  4. Assemble Cobbler: Drop spoonfuls of the batter over the blueberry filling and gently spread it out to mostly cover the fruit. Sprinkle the coarse sugar on top if using, for added crunch and sweetness.
  5. Bake: Bake for 35–40 minutes or until the topping is golden brown and the blueberry filling is bubbly around the edges.
