Oatmeal Base
- 1 cup old-fashioned oats

- 1 tsp vanilla extract
Blueberry Filling
- 1 cup blueberries
- ¼ cup granulated sugar
- 2 tsp cornstarch
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper, leaving overhang on the sides for easy removal.
- Mix Dry Ingredients: In a large bowl, combine old-fashioned oats, all-purpose flour, light brown sugar, baking soda, salt, and optional cinnamon. Stir well to evenly distribute the ingredients.
- Add Wet Ingredients: Pour the melted unsalted butter and vanilla extract into the dry mixture. Stir until the mixture becomes crumbly but holds together when pressed.
- Form Base Layer: Press half of the oat crumb mixture firmly and evenly into the bottom of the prepared baking pan to form the base layer.
- Prepare Blueberry Filling: In a separate bowl, toss the blueberries with granulated sugar and cornstarch to coat them evenly. Spread this blueberry mixture uniformly over the oat base layer in the pan.
- Top Layer: Crumble the remaining oat mixture over the blueberries and lightly press down to create the top layer.
- Bake: Bake the bars in the preheated oven for 35 to 40 minutes, or until the top is golden brown and the blueberry filling is bubbly.
- Cool and Serve: Remove from the oven and allow the bars to cool completely on a wire rack. Once cooled, lift the bars out using the parchment overhang and cut into 12 equal pieces to serve.
