Description

These Blueberry Oatmeal Bars are a deliciously healthy and easy-to-make snack perfect for breakfast or a midday treat. Made with a crumbly oat and flour base, sweetened with brown sugar and bursting with fresh blueberries, these bars offer a delightful balance of fruity sweetness and wholesome oats. Baked until golden and bubbly, they make a nutritious homemade alternative to store-bought snack bars.

Ingredients

Scale

Oatmeal Base

  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Blueberry Filling

  • 1 cup blueberries
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper, leaving overhang on the sides for easy removal.
  2. Mix Dry Ingredients: In a large bowl, combine old-fashioned oats, all-purpose flour, light brown sugar, baking soda, salt, and optional cinnamon. Stir well to evenly distribute the ingredients.
  3. Add Wet Ingredients: Pour the melted unsalted butter and vanilla extract into the dry mixture. Stir until the mixture becomes crumbly but holds together when pressed.
  4. Form Base Layer: Press half of the oat crumb mixture firmly and evenly into the bottom of the prepared baking pan to form the base layer.
  5. Prepare Blueberry Filling: In a separate bowl, toss the blueberries with granulated sugar and cornstarch to coat them evenly. Spread this blueberry mixture uniformly over the oat base layer in the pan.
  6. Top Layer: Crumble the remaining oat mixture over the blueberries and lightly press down to create the top layer.
  7. Bake: Bake the bars in the preheated oven for 35 to 40 minutes, or until the top is golden brown and the blueberry filling is bubbly.
  8. Cool and Serve: Remove from the oven and allow the bars to cool completely on a wire rack. Once cooled, lift the bars out using the parchment overhang and cut into 12 equal pieces to serve.

Notes

  • For a nuttier flavor, you can add ½ cup chopped nuts like walnuts or pecans to the oat mixture.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • They also freeze well; wrap individually for a quick grab-and-go snack.
  • You may substitute blueberries with other berries or fruits as desired.
  • Using parchment paper with overhang makes it easy to lift the bars out for cutting without crumbling.
