For the Orzo:
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1 package (5.2 ounces) Boursin garlic & herb cheese
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach (optional)
- Chopped parsley for garnish
Instructions
- Season the Chicken: Season the chicken with garlic powder, salt, and pepper.
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken until golden and cooked through, about 5–7 minutes. Remove and set aside.
- Cook the Orzo: In the same pan, toast the orzo for 1–2 minutes. Add chicken broth, simmer until absorbed, about 8–10 minutes.
- Make the Sauce: Reduce heat, stir in Boursin, cream, and Parmesan until creamy.
- Combine and Serve: Fold in chicken, spinach, cook until wilted. Garnish with parsley and serve.
