Description

A hearty and flavorful Breakfast Burrito Casserole that combines eggs, sausage, beans, and spices layered with tortilla strips, baked to golden perfection. Perfect for a family breakfast or brunch, this casserole offers a delicious twist on classic burritos in an easy-to-serve baked dish.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 cup cooked sausage
  • 1 can black beans, drained and rinsed
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Casserole Base

  • 8 small tortillas

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the casserole evenly.
  2. Prepare Egg Mixture: In a large bowl, whisk together the 6 large eggs and 1 cup of milk until smooth and combined to form the base of the casserole.
  3. Add Fillings: Stir in the 1 cup shredded cheese, 1 cup cooked sausage, 1 can drained and rinsed black beans, 1 cup diced bell peppers, 1 cup diced onions, 1 teaspoon cumin, 1 teaspoon chili powder, and season with salt and pepper. Mix everything thoroughly so the flavors meld well.
  4. Layer Tortillas: Cut the 8 small tortillas into strips. Lightly grease a casserole dish and spread half of the tortilla strips evenly as the first layer.
  5. First Egg Layer: Pour half of the prepared egg and filling mixture over the first layer of tortilla strips, making sure to cover them evenly.
  6. Second Layer: Add the remaining tortilla strips on top of the first egg mixture layer, spreading them out evenly for the second base.
  7. Final Egg Layer: Pour the remaining half of the egg mixture over the top layer of tortillas, ensuring an even distribution.
  8. Bake: Bake the assembled casserole in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
  9. Cool and Serve: Remove from the oven and let the casserole cool for a few minutes before slicing and serving.

Notes

  • You can substitute sausage with chorizo or turkey sausage for different flavor variations.
  • Feel free to add jalapeños or hot sauce if you prefer a spicier casserole.
  • The casserole can be prepared the night before, assembled, and refrigerated; bake in the morning for convenience.
  • Use gluten-free tortillas to make this dish gluten-free if necessary.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
