Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the casserole evenly.
- Prepare Egg Mixture: In a large bowl, whisk together the 6 large eggs and 1 cup of milk until smooth and combined to form the base of the casserole.
- Add Fillings: Stir in the 1 cup shredded cheese, 1 cup cooked sausage, 1 can drained and rinsed black beans, 1 cup diced bell peppers, 1 cup diced onions, 1 teaspoon cumin, 1 teaspoon chili powder, and season with salt and pepper. Mix everything thoroughly so the flavors meld well.
- Layer Tortillas: Cut the 8 small tortillas into strips. Lightly grease a casserole dish and spread half of the tortilla strips evenly as the first layer.
- First Egg Layer: Pour half of the prepared egg and filling mixture over the first layer of tortilla strips, making sure to cover them evenly.
- Second Layer: Add the remaining tortilla strips on top of the first egg mixture layer, spreading them out evenly for the second base.
- Final Egg Layer: Pour the remaining half of the egg mixture over the top layer of tortillas, ensuring an even distribution.
- Bake: Bake the assembled casserole in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
- Cool and Serve: Remove from the oven and let the casserole cool for a few minutes before slicing and serving.
