Ingredients
Scale
Brownie Layer
- 1 box (18–20 ounces) brownie mix (plus eggs, oil, and water as directed on package)
Cheesecake Layer
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
Topping (Optional)
- Chocolate chips or chocolate ganache for topping
Instructions
- Prepare Brownie Layer: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper to ensure easy release. Prepare the brownie batter following the package instructions, then pour it evenly into the prepared pan.
- Bake Brownie Layer: Bake the brownie batter for 20 minutes. After baking, remove the pan from the oven and allow it to cool slightly while you prepare the cheesecake layer.
- Mix Cheesecake Batter: In a large bowl, beat softened cream cheese and sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition to ensure a smooth mixture. Stir in vanilla extract, sour cream, flour, and salt, mixing until just combined and smooth.
- Add Cheesecake Layer: Gently pour the cheesecake batter over the partially baked brownie layer, spreading it evenly with a spatula for a smooth top.
- Bake Cheesecake: Return the pan to the oven and bake for an additional 40–45 minutes, until the center is mostly set but still slightly jiggly to the touch.
- Cool in Oven: Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking and allow gradual cooling.
- Chill: Remove the cheesecake from the oven and place it in the refrigerator to chill for at least 4 hours or preferably overnight. This helps the layers set firmly and enhances flavor development.
- Add Topping and Serve: Before serving, optionally top with chocolate chips or drizzle with chocolate ganache for added richness. Slice and enjoy your decadent brownie bottom cheesecake.
Notes
- Choose a fudgy brownie mix for the best texture and flavor base.
- Ensure all cheesecake ingredients are at room temperature to achieve a smooth, lump-free cheesecake layer.
- Refrigerate the cheesecake for sufficient time to allow layers to set properly which makes slicing clean and easier.
- Using a springform pan makes removing the cheesecake convenient and preserves the layered appearance.
