  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon lemon juice
  • Optional: fresh parsley for garnish

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened.
  2. Add Ingredients: Stir in garlic, cabbage, diced tomatoes, broth, thyme, paprika, salt, pepper, and bay leaf. Bring to a boil.
  3. Simmer: Reduce heat, simmer for 25–30 minutes until vegetables are tender and flavors are blended.
  4. Finish: Remove bay leaf, stir in lemon juice, adjust seasoning, and serve hot with parsley.
