Description

Crunchy and flavorful Cajun pumpkin seeds roasted to perfection with a blend of butter, Worcestershire sauce, and aromatic spices. A perfect savory snack packed with a spicy kick and a satisfying crunch.

Ingredients

Scale

Seeds

  • 1 cup (approximately 100 g) raw pumpkin seeds, rinsed and patted dry

Seasoning Mixture

  • 1 tbsp (14 g) melted butter
  • 2 liberal dashes Worcestershire sauce
  • Salt, to taste
  • 1 scant teaspoon Cajun seasoning
  • 1/4 teaspoon paprika

Instructions

  1. Clean Pumpkin Seeds: Rinse the pumpkin seeds thoroughly under cold water to remove as much pumpkin pulp as possible. Some small pumpkin bits remaining won’t affect the flavor and can add dimension. Pat the seeds dry promptly using paper towels to minimize sticking and prepare them for seasoning.
  2. Prepare the Seasoning Mixture: In a mixing bowl, combine the melted butter and Worcestershire sauce, stirring well to blend. Add the pumpkin seeds along with the Cajun seasoning, paprika, and salt, then toss or stir until the seeds are evenly coated with the flavorful mixture.
  3. Preheat the Oven: Set your oven to 300°F (149°C) and prepare a rimmed baking sheet. Spreading the seeds in a single layer ensures even roasting and optimal crispiness.
  4. Roast the Seeds: Place the baking sheet in the preheated oven and roast the seeds for 45 to 60 minutes. Every 20 minutes, stir and turn the seeds to promote even browning and prevent burning, ensuring a crunchy texture and deep flavor.
  5. Check and Finish Roasting: After 45 minutes, check that the seeds are crunchy and emit a roasted, aromatic scent. If they need more time, continue to roast, checking every 5 to 10 minutes to avoid overcooking. Once perfectly crunchy and browned, remove from oven and let cool before enjoying.

Notes

  • Ensure seeds are as dry as possible before seasoning to help crispness.
  • Customize the heat level by adjusting Cajun seasoning amount.
  • Store cooled pumpkin seeds in an airtight container for up to one week.
  • If you prefer oil to butter, substitute with an equal amount of olive oil or avocado oil.
  • This recipe works well for roasting other seeds like sunflower seeds with adjusted timing.
