Description

Oat Base and Topping:

  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 1/2 cups packed brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups unsalted butter, melted

Filling:

  • 2 cups semisweet chocolate chips
  • 1 cup chopped pecans (optional)
  • 1 (14-ounce) bag soft caramels, unwrapped
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F. Grease a 9×13-inch baking dish or line with parchment paper.
  2. Mix oat base: In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
  3. Layer and bake: Press half of the oat mixture into the dish. Bake for 10 minutes.
  4. Prepare caramel: Melt caramels with heavy cream in a saucepan until smooth.
  5. Assemble: Sprinkle chocolate chips and pecans over crust. Pour caramel mixture evenly. Top with remaining oat mixture.
  6. Bake: Bake for 20–22 minutes until golden. Cool before cutting into bars.

  • For a salted caramel twist, add flaky sea salt over the caramel layer.
