- 2 large yellow onions (thinly sliced)
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 3 cloves garlic (minced)
- 1/4 cup dry white wine or pasta water
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 tablespoon chopped parsley (optional)
- Red pepper flakes to taste
For the Chilli Oil:
- 1/3 cup olive oil
- 2 teaspoons red pepper flakes
- 1 clove garlic (smashed)
- 1/2 teaspoon smoked paprika
- Pinch of salt
Instructions
- Cook the Pasta: Boil the pasta until al dente, then drain and set aside.
- Caramelize the Onions: Slowly cook sliced onions in olive oil with salt and sugar until golden brown. Add garlic, deglaze with wine or pasta water.
- Make the Sauce: Add black pepper, Parmesan, butter, and pasta water to the pan. Toss in the pasta.
- Prepare the Chilli Oil: Infuse olive oil with red pepper flakes, garlic, smoked paprika, and salt.
