  • 1/4 cup dry white wine or pasta water
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon chopped parsley (optional)
  • Red pepper flakes to taste

For the Chilli Oil:

  • 1/3 cup olive oil
  • 2 teaspoons red pepper flakes
  • 1 clove garlic (smashed)
  • 1/2 teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. Cook the Pasta: Boil the pasta until al dente, then drain and set aside.
  2. Caramelize the Onions: Slowly cook sliced onions in olive oil with salt and sugar until golden brown. Add garlic, deglaze with wine or pasta water.
