- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar packed
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
Additional Ingredients:
- 1 1/2 cups finely grated carrots
- 1/2 cup crushed pineapple drained
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and prepare an 8×8-inch baking pan.
- Mix dry ingredients: Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
- Combine wet ingredients: In a separate bowl, mix eggs, sugars, oil, and vanilla. Add carrots and pineapple.
- Combine and bake: Mix dry ingredients into wet, fold in nuts, pour into pan, and bake for 30–35 minutes.
- Cool and serve: Cool completely before slicing into bars.
Notes
- You can frost these bars with cream cheese frosting for a classic carrot cake flavor.
- For a lighter version, substitute applesauce for half the oil.
