Description

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple drained
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare an 8×8-inch baking pan.
  2. Mix dry ingredients: Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. Combine wet ingredients: In a separate bowl, mix eggs, sugars, oil, and vanilla. Add carrots and pineapple.
  4. Combine and bake: Mix dry ingredients into wet, fold in nuts, pour into pan, and bake for 30–35 minutes.
  5. Cool and serve: Cool completely before slicing into bars.
