Chicken:

  • lbs boneless, skinless chicken breast or thighs (cut into bite-sized pieces)

Stir-Fry:

  • ½ cup roasted unsalted cashews
  • 2 tablespoons vegetable oil
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 3 green onions (sliced)
  • 2 garlic cloves (minced)
  • 1 tablespoon grated fresh ginger
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Cook chicken pieces with salt and pepper until browned and cooked through. Set aside.
  2. Sauté Vegetables: In the same pan, sauté garlic, ginger, and bell peppers until tender.
  3. Combine Ingredients: Return chicken to the pan, add soy sauce, hoisin sauce, rice vinegar, and cornstarch slurry. Cook until the sauce thickens.
  4. Finish Dish: Add cashews, green onions, and sesame oil. Toss together and cook briefly. Serve hot with rice.

  • You can use pre-roasted cashews or toast raw cashews briefly in a dry skillet for added crunch.
