Instructions
- Cook Potatoes: In a skillet, heat olive oil over medium heat. Add peeled and diced potatoes and cook until crispy and golden, about 10–12 minutes. Season with salt, pepper, and a pinch of garlic powder while cooking.
- Brown Ground Beef: In another skillet, cook ground beef over medium heat until browned evenly. Drain any excess fat to reduce greasiness.
- Season Beef: Add chili powder, cumin, remaining garlic powder, salt, and pepper to the beef. Stir well to combine and cook for an additional 2–3 minutes to develop flavors.
- Warm Tortillas: Heat the flour tortillas in a dry skillet over low heat or microwave for a few seconds until they become warm and pliable for easy rolling.
- Assemble Burritos: On each warm tortilla, layer a portion of cooked beef, crispy potatoes, and shredded cheese. Add optional dollops of sour cream and salsa or pico de gallo as desired.
- Roll and Toast: Tightly roll up each tortilla, folding in the sides to fully enclose the filling. Optionally, toast the burritos seam-side down in a skillet over medium heat for 1–2 minutes until sealed and the cheese starts melting.
