  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. Heat the olive oil: In a large skillet over medium heat, heat the olive oil.
  2. Cook the beef: Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess grease.
  3. Saute onions and garlic: Add the diced onion and minced garlic to the skillet and cook until softened, about 2–3 minutes.
  4. Add seasonings and liquids: Stir in the taco seasoning, diced tomatoes with green chilies, and beef broth.
