Description

These Cheesy Ranch Oven Roasted Potatoes are a delicious side dish that pairs perfectly with any meal. Tender baby red potatoes are seasoned with ranch seasoning mix and roasted until golden brown, then topped with melted cheddar cheese for a gooey finish.

Ingredients

Scale

Potatoes:

  • 2 pounds baby red potatoes, quartered

Seasoning:

  • 3 tablespoons olive oil
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

Toppings:

  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Potatoes: In a large bowl, toss quartered potatoes with olive oil, ranch seasoning mix, garlic powder, smoked paprika, and black pepper until evenly coated.
  3. Roast Potatoes: Spread the potatoes on the baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through, until golden and fork-tender.
  4. Add Cheese: Remove from the oven and sprinkle shredded cheddar cheese over the potatoes. Return to the oven for 3-5 minutes until the cheese is melted and bubbly.
  5. Garnish and Serve: Garnish with fresh parsley and sliced green onions before serving.

Notes

  • For extra crispiness, broil the potatoes for 2 minutes after adding the cheese.
  • You can swap cheddar for Monterey Jack or pepper jack for a different flavor.
  • This recipe works well with Yukon Gold or russet potatoes too.
