Description

Cheesy Spinach-Artichoke Bagels are a delicious and savory snack or appetizer featuring a creamy mixture of spinach, artichokes, and cheeses spread over toasted bagel halves. This easy-to-make recipe combines fresh ingredients with melted mozzarella and Parmesan to create a warm, satisfying treat perfect for any occasion.

Ingredients

Scale

Bagels

  • 2 plain or everything bagels, halved

Topping

  • 1 teaspoon olive oil
  • 1 small garlic clove, minced
  • 1 cup fresh spinach, chopped
  • ½ cup canned artichoke hearts, drained and chopped
  • 3 ounces cream cheese, softened
  • ¼ cup sour cream
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the bagels.
  2. Sauté garlic: In a skillet over medium heat, warm the olive oil and lightly sauté the minced garlic for about 30 seconds until fragrant.
  3. Cook spinach: Add the chopped spinach to the skillet and cook until wilted, approximately 2 minutes, then remove the pan from the heat.
  4. Add artichokes: Stir the chopped, drained artichoke hearts into the cooked spinach mixture, combining well.
  5. Mix cheeses and seasonings: In a mixing bowl, combine cream cheese, sour cream, mozzarella, Parmesan cheese, salt, and black pepper until smooth and well blended.
  6. Combine vegetables and cheese mixture: Fold the spinach and artichoke mixture into the cheese blend gently, making sure it’s evenly distributed.
  7. Prepare bagels: Spread the cheesy spinach-artichoke mixture evenly over the cut sides of each bagel half.
  8. Bake: Place the topped bagels on a baking sheet and bake in the preheated oven for 10 to 12 minutes until the cheese is melted and bubbly.
  9. Serve: Remove from the oven and serve warm, optionally topped with a pinch of red pepper flakes for a slight kick.
