Description

This classic Filipino Chicken Adobo is a flavorful and hearty dish featuring tender chicken thighs marinated and simmered in a savory blend of soy sauce, white vinegar, garlic, bay leaves, and black peppercorns. Perfectly balanced with a tangy and umami-packed sauce, this recipe is easy to prepare and serves as a comforting meal when paired with steamed rice.

Ingredients

Scale

Chicken and Marinade

  • 4 chicken thighs, bone-in
  • 1/4 cup soy sauce
  • 1/4 cup white vinegar
  • 5 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon salt

Cooking

  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the Marinade: In a bowl, combine the soy sauce, white vinegar, minced garlic, bay leaves, black peppercorns, and salt. Add the chicken thighs to this mixture and ensure they are well coated. Marinate for 30 minutes to 1 hour to allow the flavors to penetrate the chicken.
  2. Brown the Chicken: Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Once hot, place the marinated chicken thighs in the skillet and brown them on both sides, about 4 minutes per side, until they develop a golden crust.
  3. Simmer the Chicken: Pour the marinade into the skillet with the browned chicken and bring it to a boil. After boiling, reduce the heat to low and let it simmer uncovered for 30 to 35 minutes, or until the chicken is tender and fully cooked through, and the sauce is slightly thickened.
  4. Serve: Remove from heat and serve the chicken adobo hot, ideally accompanied by steamed rice to soak up the delicious sauce.

Notes

  • For a richer flavor, marinate the chicken overnight in the refrigerator.
  • You can adjust vinegar and soy sauce quantities to your taste preference for more tang or saltiness.
  • Adding sliced onions or potatoes during the simmering step is a popular variation.
  • Ensure to simmer uncovered to allow the sauce to reduce and thicken properly.
