A quick and delicious Chicken Caprese Skillet recipe that combines tender chicken cutlets with the classic flavors of caprese salad, finished with a balsamic glaze. This one-pan dish is perfect for a simple weeknight dinner.

Chicken:
- 2 boneless, skinless chicken breasts (halved horizontally to make 4 cutlets)
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
Other Ingredients:
- 2 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 4 slices fresh mozzarella
- ¼ cup balsamic glaze
- Fresh basil leaves for garnish
Instructions
- Season the chicken: On both sides with Italian seasoning, salt, and pepper.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 4–5 minutes per side until golden brown and cooked through. Remove from skillet.
- Prepare the tomatoes: In the same skillet, sauté minced garlic and cherry tomatoes for 2–3 minutes until softened.
- Finish the dish: Return the chicken to the skillet, top each piece with a slice of mozzarella, cover, and cook for another 2–3 minutes until cheese is melted. Drizzle with balsamic glaze and garnish with fresh basil.
Notes
- For a low-carb meal, serve over zucchini noodles or arugula.
- Use boneless thighs if preferred.
