For the Chicken Scampi

- 1 tsp Italian seasoning
- Salt and pepper to taste

- 1 cup rice (preferably jasmine or long-grain)
- 2 cups chicken broth (for rice)

Instructions
- Cook the Rice: In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the rice, reduce heat to low, cover, and cook for 15-18 minutes until the rice is tender and all the liquid is absorbed. Remove from heat, fluff rice with a fork, stir in 1 tablespoon of butter, and set aside to keep warm.
- Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and 1 teaspoon Italian seasoning. Cook the chicken for 6-8 minutes, turning occasionally until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
- Make the Scampi Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant but not browned. Pour in 1/2 cup chicken broth and bring to a simmer, scraping the bottom of the pan to deglaze and lift any browned bits. Let the broth simmer for 2-3 minutes to reduce slightly. Stir in 1 cup heavy cream and 1 cup grated Parmesan cheese, then continue simmering for 3-4 minutes until the sauce thickens and coats the back of a spoon.
- Combine: Return the cooked chicken to the skillet and toss gently in the creamy garlic Parmesan sauce. Cook together for an additional 2 minutes so the chicken absorbs some of the sauce flavors.
