Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ½ cup sour cream
  • 2 cloves garlic
  • 1 cucumber, peeled, cut in quarters and seeded
  • 1 tablespoon lemon juice

  • 2 tablespoons fresh dill
  • Kosher salt, to taste

Pizza

  • 4 pieces Greek flatbread or pita breads
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cooked chicken breast
  • ½ cup sliced kalamata olives
  • â…“ cup sliced sun-dried tomatoes
  • 1 cup quartered artichoke hearts packed in water, drained
  • â…“ cup feta cheese
  • Oregano, to sprinkle
  • Kosher salt, to taste
  • Fresh dill for garnish
  • Red chili pepper flakes for garnish


Instructions

  1. Prepare Tzatziki Sauce: In a food processor fitted with a metal blade, add garlic, cucumber, and dill. Pulse to chop finely. Add the Greek yogurt, sour cream, lemon juice, and olive oil, then pulse again to blend the ingredients smoothly. Season with kosher salt to taste. Transfer the sauce to a bowl and refrigerate for at least one hour to allow the flavors to meld.
  2. Preheat Oven and Prepare Flatbreads: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper. Place the Greek flatbreads or pita breads domed side down on the prepared sheet, creating a flat base for the toppings.
  3. Assemble the Pizza: Spread about 1 to 2 tablespoons of the chilled tzatziki sauce evenly over each pita bread. Sprinkle approximately ⅓ to ½ cup shredded mozzarella cheese over the sauce on each pizza. Evenly layer the shredded chicken breast, sliced kalamata olives, sun-dried tomatoes, and artichoke hearts on top of the mozzarella. Finally, sprinkle the feta cheese and a pinch of oregano over each pizza.
  4. Bake the Pizza: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes, or until the mozzarella cheese is melted and bubbly and the feta cheese starts to develop golden spots.
  5. Garnish and Serve: Remove the pizzas from the oven. Garnish each with fresh dill sprigs and a sprinkle of red chili pepper flakes. Add extra feta cheese if desired. Cut each pizza into quarters and serve warm.
