Description

These Chili Cheeseburgers are a hearty and flavorful twist on the classic cheeseburger, featuring juicy grilled beef patties topped with melted cheddar cheese and a generous spoonful of warm chili. Perfect for backyard cookouts or comfort food cravings, they’re assembled with toasted buttery buns, diced red onions, and optional pickled jalapeños for a spicy kick.

Ingredients

Scale

Burger Patties

  • 1 1/2 pounds ground beef 80/20
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 slices cheddar cheese

Buns & Toppings

  • 4 hamburger buns, split
  • 1 tablespoon butter, softened
  • 1 1/2 cups prepared beef chili (with or without beans)
  • 1/4 cup finely diced red onion
  • 1/4 cup sliced pickled jalapeños (optional)

Instructions

  1. Prepare the Patties: In a bowl, gently combine the ground beef with salt, pepper, garlic powder, and onion powder. Divide the mixture into 4 equal portions and form into patties slightly larger than the buns, pressing a small indentation in the center of each to ensure even cooking.
  2. Cook the Burgers: Preheat a grill or skillet over medium-high heat. Cook the patties for 4 to 5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty and cover to allow the cheese to melt thoroughly.
  3. Toast the Buns: While the burgers cook, lightly butter the cut sides of the hamburger buns. Toast them on the grill or in a skillet until golden brown and slightly crisp.
  4. Warm the Chili: Pour the prepared beef chili into a small saucepan and heat over medium heat until warmed through, stirring occasionally to prevent sticking.
  5. Assemble the Burgers: Place a cheesy burger patty on the bottom half of each toasted bun. Spoon a generous amount of warm chili over the patty, then top with finely diced red onion and sliced pickled jalapeños if desired. Finish with the top bun and serve immediately for the best taste and texture.

Notes

  • Use homemade or high-quality store-bought chili for the best flavor.
  • For extra richness, stir a spoonful of shredded cheddar into the hot chili before topping the burgers.
  • Serve with plenty of napkins as these burgers can be messy and hearty.
