Description

A classic Chinese Pepper Steak with Onions recipe featuring tender flank steak stir-fried with colorful bell peppers and onions in a savory sauce. Perfect for a quick and flavorful weeknight dinner served with steamed rice.

Ingredients

Scale

Beef Marinade

  • 1 pound flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon cornstarch

Vegetables & Aromatics

  • 1 large green bell pepper, sliced into strips
  • 1 large red bell pepper, sliced into strips
  • 1 large yellow onion, sliced
  • 2 cloves garlic, minced

Sauce & Finishing

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil (for cooking)

Instructions

  1. Marinate the Beef: In a bowl, combine the thinly sliced flank steak with 2 tablespoons soy sauce, 1 tablespoon oyster sauce, Shaoxing wine, and 1 teaspoon cornstarch. Mix well and let it marinate for 15 minutes to enhance the flavor and tenderize the meat.
  2. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and sear it for 2 to 3 minutes until it is just browned but not fully cooked through. Remove the beef from the pan and set it aside.
  3. Stir-Fry the Vegetables: Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir-fry the sliced onions and bell peppers for about 3 to 4 minutes until they become slightly tender but still crisp. Then add the minced garlic and freshly ground black pepper, stirring for an additional 30 seconds to release their aromas.
  4. Combine and Finish: Return the seared beef to the pan with vegetables. Pour in 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon sesame oil. Stir everything to combine. Then add the cornstarch slurry and continue stirring for 2 to 3 minutes until the sauce thickens nicely and coats the beef and vegetables evenly.
  5. Serve: Serve the pepper steak hot over steamed rice for a satisfying and tasty meal.

Notes

  • For extra depth of flavor, add a splash of dark soy sauce for a richer color.
  • You can add a pinch of sugar if you prefer a slight sweetness to balance the savory flavors.
  • Skirt steak or sirloin can be substituted if flank steak is not available.
  • Ensure to slice the beef thinly against the grain for maximum tenderness.
