Description

Deliciously fluffy chocolate chip pancakes made with a simple batter of flour, sugar, baking powder, and milk, studded with mini chocolate chips. Perfect for a kid-friendly, easy-to-make breakfast that can be customized to be dairy-free or vegan.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Add-ins and Cooking

  • 1/2 cup mini or regular chocolate chips
  • Extra butter or oil for cooking

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  2. Mix Wet Ingredients: In another bowl, whisk the milk, large egg, melted unsalted butter, and vanilla extract until the mixture is smooth and uniform.
  3. Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy. Gently fold in the chocolate chips to evenly distribute them.
  4. Heat Skillet: Preheat a nonstick skillet or griddle over medium heat. Lightly grease the surface with butter or oil to prevent sticking.
  5. Cook Pancakes: Pour approximately 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2–3 minutes until bubbles appear on the surface and edges look set.
  6. Flip and Finish Cooking: Flip each pancake carefully and cook for another 1–2 minutes, until the bottoms are golden brown and cooked through.
  7. Serve: Serve the pancakes warm with butter, syrup, and extra chocolate chips if desired. Repeat the cooking process with the remaining batter.

Notes

  • For fluffier pancakes, let the batter rest for 5–10 minutes before cooking to allow the baking powder to activate fully.
  • You can substitute dairy-free milk and use vegan chocolate chips to make this recipe suitable for dairy-free diets.
