Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Mix Wet Ingredients: In another bowl, whisk the milk, large egg, melted unsalted butter, and vanilla extract until the mixture is smooth and uniform.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy. Gently fold in the chocolate chips to evenly distribute them.
- Heat Skillet: Preheat a nonstick skillet or griddle over medium heat. Lightly grease the surface with butter or oil to prevent sticking.
- Cook Pancakes: Pour approximately 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2–3 minutes until bubbles appear on the surface and edges look set.
- Flip and Finish Cooking: Flip each pancake carefully and cook for another 1–2 minutes, until the bottoms are golden brown and cooked through.
- Serve: Serve the pancakes warm with butter, syrup, and extra chocolate chips if desired. Repeat the cooking process with the remaining batter.
