Rolls and Coating
- 12 frozen Rhodes Dinner rolls (thawed)
- 1/2 cup butter (melted)
- 1 Tablespoon light corn syrup
- 1 ¼ cups light brown sugar
- 2 teaspoons ground cinnamon
Vanilla Icing
- 2 cups powdered sugar
- 2 Tablespoons butter (melted)
- 3 to 4 Tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat and prepare rolls: Preheat your oven to 350°F (175°C). Take each thawed Rhodes Dinner roll and cut it into 6 equal pieces, setting them aside for coating.
- Coat the roll pieces: In a medium bowl, combine the melted butter and light corn syrup. In another bowl, mix the light brown sugar with ground cinnamon. Dip each roll piece first into the butter and corn syrup mixture, then roll it in the cinnamon sugar mixture until well coated.
- Arrange and bake: Place 6 coated pieces into each cup of a well-greased 12-cup muffin tin. Repeat until all pieces are coated and placed in the muffin cups. Bake in the preheated oven for 16 to 18 minutes until golden brown and puffed up.
- Cool the rolls: Remove the muffin tin from the oven and allow the rolls to cool for at least 20 minutes before attempting to remove them. This resting period helps them set and prevents falling apart.
- Prepare the vanilla icing: In a medium bowl, stir together powdered sugar, melted butter, milk, and vanilla extract. Adjust the milk quantity to reach your desired icing thickness.
- Serve: Spoon the vanilla icing generously over the cooled mini monkey breads and enjoy this sweet, cinnamon-infused treat.
