Egg Whites:

  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Additional Ingredients:

  • 1 tablespoon chopped fresh chives (optional)
  • cooking spray or a little olive oil for greasing

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Separate Eggs: Separate the egg whites from the yolks, placing the yolks in individual small bowls and the whites in a mixing bowl.
  3. Beat Egg Whites: Using an electric mixer, beat the egg whites with salt and pepper until stiff peaks form, about 2 to 3 minutes.
  4. Add Cheese: Gently fold in the grated Parmesan cheese.
  5. Form Clouds: Spoon the whipped egg whites onto the prepared baking sheet into four separate mounds. Make a small well in the center of each mound.
  6. Bake: Bake for 3 minutes. Add a yolk into each well and bake for another 2 to 3 minutes until yolks are set.
  7. Finish and Serve: Remove from oven, sprinkle with chopped chives if using, and serve immediately.

  • For added flavor, mix in finely chopped cooked bacon or herbs into the egg whites before baking.
