Egg Whites:
- 4 large eggs

- 1/4 cup grated Parmesan cheese

Instructions
- Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Separate Eggs: Separate the egg whites from the yolks, placing the yolks in individual small bowls and the whites in a mixing bowl.
- Beat Egg Whites: Using an electric mixer, beat the egg whites with salt and pepper until stiff peaks form, about 2 to 3 minutes.
- Add Cheese: Gently fold in the grated Parmesan cheese.
- Form Clouds: Spoon the whipped egg whites onto the prepared baking sheet into four separate mounds. Make a small well in the center of each mound.
- Bake: Bake for 3 minutes. Add a yolk into each well and bake for another 2 to 3 minutes until yolks are set.
- Finish and Serve: Remove from oven, sprinkle with chopped chives if using, and serve immediately.

- For added flavor, mix in finely chopped cooked bacon or herbs into the egg whites before baking.
- Serve over toast, avocado, or sautéed greens for a complete breakfast.
