For the Cowboy Beans:
- 1 tablespoon olive oil
- 1 pound ground beef
- 6 slices bacon, chopped
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can baked beans, not drained
- 1/2 cup barbecue sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large Dutch oven or skillet over medium heat. Add chopped bacon and cook until crisp. Remove and set aside.
- Brown ground beef: In the same pot, add ground beef and cook until browned. Drain excess fat if needed.
- Saute vegetables: Add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
- Add ingredients: Stir in all beans, barbecue sauce, ketchup, brown sugar, mustard, chili powder, and black pepper.
- Combine: Add cooked bacon back to the pot. Stir to combine.
- Simmer: Bring to a gentle simmer and cook uncovered for 15–20 minutes, stirring occasionally until thickened and bubbly.
- Serve: Enjoy warm as a main dish or side dish.
