For the Cowboy Beans:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can baked beans, not drained
  • 1/2 cup barbecue sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large Dutch oven or skillet over medium heat. Add chopped bacon and cook until crisp. Remove and set aside.
  2. Brown ground beef: In the same pot, add ground beef and cook until browned. Drain excess fat if needed.
  3. Saute vegetables: Add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
  4. Add ingredients: Stir in all beans, barbecue sauce, ketchup, brown sugar, mustard, chili powder, and black pepper.
  5. Combine: Add cooked bacon back to the pot. Stir to combine.
  6. Simmer: Bring to a gentle simmer and cook uncovered for 15–20 minutes, stirring occasionally until thickened and bubbly.
  7. Serve: Enjoy warm as a main dish or side dish.

Notes
