Instructions

  1. Melt the Fat: In a saucepan, melt the butter or coconut oil over medium heat until fully melted and slightly bubbling to start the base of your oatmeal.
  2. Toast the Oats: Add the rolled oats to the saucepan and toast them for 2 to 3 minutes, stirring frequently, until fragrant and slightly golden to enhance flavor and texture.
  3. Add Spices: Sprinkle in the kosher salt and cinnamon. Stir to combine and allow the spices to toast briefly with the oats for an enhanced aroma.
  4. Add Liquids & Banana: Turn the heat to low. Carefully pour in the water and your choice of milk while stirring. If using bananas for sweetness, mash them and stir in at this point.
  5. Cook the Oatmeal: Cover the saucepan and simmer on low heat for about 5 minutes until the oats are tender but still chewy, thickening the mixture without becoming soggy.
  6. Adjust Texture: Remove from heat. For a creamier texture, stir in an extra 1/2 cup of milk until fully incorporated. Otherwise, keep the oatmeal chunkier.
  7. Add Toppings & Serve: Spoon oatmeal into bowls and top each with 2 to 3 tablespoons of peanut butter and any additional desired toppings such as honey, maple syrup, berry jam, or fresh fruit. Serve immediately and enjoy.
