Creamy Chocolate Pot de Crème
- 1½ cups heavy cream
- ½ cup whole milk
- 4 ounces semi-sweet or bittersweet chocolate (chopped)
- 4 large egg yolks
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven: Preheat the oven to 325°F.
- Melt Chocolate: In a saucepan, heat the heavy cream and milk until steaming. Remove from heat and stir in chopped chocolate until smooth.
- Prepare Egg Mixture: In a bowl, whisk egg yolks, sugar, vanilla, and salt. Slowly pour in the warm chocolate mixture, whisking constantly.
- Strain and Pour: Strain the custard and pour into ramekins placed in a water bath.
- Bake: Bake for 30–35 minutes until just set. Cool, then refrigerate for at least 2 hours.
