Description

Delight your guests with these elegant and refreshing Creamy Cucumber Tea Sandwiches. Perfect for afternoon tea or as a light snack, these sandwiches are easy to make and bursting with creamy, herby flavors.

Ingredients

Scale

Cream Cheese Spread:

  • 8 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Other:

  • 1 English cucumber, thinly sliced
  • 12 slices white or whole wheat sandwich bread, crusts removed
  • Butter (optional, for spreading)

Instructions

  1. Prepare Cream Cheese Spread: In a medium bowl, mix the softened cream cheese, mayonnaise, dill, lemon juice, garlic powder, salt, and pepper until smooth and well combined.
  2. Prepare Cucumbers: Pat the cucumber slices dry with paper towels to prevent sogginess.
  3. Prepare Bread: If desired, lightly spread a thin layer of butter on each bread slice.
  4. Assemble Sandwiches: Spread the cream cheese mixture evenly on each slice of bread. Layer cucumber slices on half the bread slices, then top with the remaining slices to form sandwiches.
  5. Cut and Serve: Press down gently, then cut each sandwich into quarters or halves. Serve immediately or refrigerate until ready to serve.

Notes

  • For added elegance, use a cookie cutter to shape sandwiches or garnish with extra dill.
  • Best served fresh, but can be made a few hours ahead and kept chilled.
