For the shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 4 slices thick-cut bacon, chopped
  • 1 small onion, diced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 green onions, chopped
  • 1 tablespoon fresh parsley, chopped
  • juice of 1/2 lemon

Instructions

  1. Prepare the grits: Bring water to a boil, whisk in grits, and cook until thickened. Stir in milk, butter, cheese, salt, and pepper. Keep warm.
  2. Cook the shrimp: Cook bacon until crisp, set aside. Sauté onion and bell peppers, add garlic, then cook seasoned shrimp until pink. Pour in broth and cream, simmer until thickened. Add lemon juice, green onions, parsley, and bacon.
  3. Serve: Spoon shrimp mixture over bowls of hot grits and enjoy!
