Indulge in a creamy and flavorful pasta dish with this Creamy Red Pepper Pasta with Burrata & Herbs recipe. Roasted red peppers, savory herbs, and luscious burrata cheese come together to create a luxurious yet simple meal that’s perfect for a cozy night in.

Ingredients

Scale

Pasta:

  • 12 ounces pasta (such as rigatoni, penne, or fettuccine)

Sauce:

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (12-ounce) jar roasted red peppers, drained and chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

To Serve:

  • 8 ounces burrata cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the pasta: Boil the pasta until al dente, then drain and set aside, reserving some pasta water.
  2. Prepare the sauce: Sauté onions and garlic, then add red peppers, cream, Parmesan, salt, and pepper. Simmer until thickened.
  3. Combine: Toss the pasta in the sauce, adding reserved pasta water if needed.
  4. Serve: Divide into bowls, top with burrata, basil, and parsley.

Notes

  • To add protein, serve with grilled chicken or shrimp.
  • For a dairy-free version, use cashew cream and omit the burrata.
  • The roasted red pepper sauce can be made ahead and stored in the fridge for up to 3 days.
