Tortellini:
- 1 package (20 ounces) refrigerated cheese tortellini
Carbonara Sauce:
- 6 slices bacon, chopped
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 large egg yolks
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup frozen peas, thawed
- Fresh parsley, chopped for garnish
Instructions
- Cook Tortellini: Boil salted water and cook tortellini. Reserve pasta water, then drain.
- Prepare Carbonara Sauce: Cook bacon until crispy, set aside. Cook garlic, then add cream, Parmesan, salt, pepper, and red pepper flakes. Temper egg yolks with pasta water, then combine with sauce. Stir in peas and bacon.
- Finish and Serve: Garnish with parsley and serve immediately.
