Creamy Vanilla Cold Brew Coffee Popsicles:
- 1½ cups cold brew coffee (unsweetened or lightly sweetened)
- 1 cup whole milk or dairy-free milk of choice
- ½ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1–2 tablespoons maple syrup or sugar (optional, to taste)
Instructions
- Mix Ingredients: In a large mixing bowl or pitcher, combine the cold brew coffee, milk, sweetened condensed milk, vanilla extract, and optional sweetener. Stir well until everything is fully combined and smooth.
- Fill Molds: Pour the mixture evenly into popsicle molds, leaving a little room at the top for expansion. Insert popsicle sticks.
- Freeze: Freeze for at least 6 hours or until fully solid.
- Serve: To release, run the molds under warm water for a few seconds, then gently pull the popsicles out. Serve immediately or store in a freezer-safe bag for up to 2 weeks.
Notes
- For a dairy-free version, use coconut condensed milk and almond or oat milk.
- To make them stronger in coffee flavor, use a more concentrated cold brew or reduce the amount of milk slightly.
