Creamy Vanilla Cold Brew Coffee Popsicles:

  • 1½ cups cold brew coffee (unsweetened or lightly sweetened)
  • 1 cup whole milk or dairy-free milk of choice
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons maple syrup or sugar (optional, to taste)

Instructions

  1. Mix Ingredients: In a large mixing bowl or pitcher, combine the cold brew coffee, milk, sweetened condensed milk, vanilla extract, and optional sweetener. Stir well until everything is fully combined and smooth.
  2. Fill Molds: Pour the mixture evenly into popsicle molds, leaving a little room at the top for expansion. Insert popsicle sticks.
  3. Freeze: Freeze for at least 6 hours or until fully solid.
  4. Serve: To release, run the molds under warm water for a few seconds, then gently pull the popsicles out. Serve immediately or store in a freezer-safe bag for up to 2 weeks.
